Elina's Green Chicken Soup - Report!

FINALLY after being on this forum for over 18 months, I have made Elina's Green Chicken Soup.  I have died and gone to culinary heaven.  I am a *major* soup fan, I could eat soup all the time, especially in winter.  I don't really cook so much by recipe, so I made my own variation based on what I had on hand - a head of brocolli, celery, onions, 3 carrots, and my personal favorite - 2 lbs of frozen spinach.  Then, instead of chicken breast, I used 2 skinless rotisserie chickens from Sams.  Lots of broth, and seasoned with salt, curry powder, and some Salsa Lizano, which is a Costa Rican sauce that is sweet and spicy.  I made a HUGE pot and filled up the freezer.  No peas or beans.  I'm eating it for lunch right now!!

I am so glad you like it!  I love that you doctored it up to fit your taste and what you have on hand.  I do that too.  That way it never gets old.  I think this soup actually served as my not so secret weapon throughout my rapid weight loss phase.  I still use it anytime I need to lose a bit.

My gf (who is not trying to lose weight) thought it was amazing, too!  We all need to eat our vegetables!!

I am glad she liked it.  I can even get my son to eat it, my daughter not so much.  I love that it's so easy on the sleeve.  I eat it when my sleeve feels extra tight.  Do be careful, as I have gotten into an unexpected situation after eating it for a few days.  My husband left me with a huge pot of this soup and I ate it almost exclusively for about three days.  Afterwords, we went out and I ate my usual size portion, but my sleeve had shrunk from eating just soup, and I got the foamies.  I will remember this if I ever feel that my capacity has increased too much.
