Yummy "chips"
Ok, I went to Central Market in Houston, just to browse this wonderful supermarket for nutritious items. It was a wonderful time. I live over an hour away from so this was a real treat for me. I know that y'all already know about these items, but I thought that I would share.....
1. Beanitos ("chips" made with black beans with 4 grms of protein) - http://www.beanitos.com/ 2. Baked Lentil Chips - 4 grms of protein made with Lentils - http://www.mediterraneansnackfoods.com/products/
3. Central Market Veggie Chips - 3 grms of protein - Mediterranean Snack Foods has veggie chips too.
For example, with Beanitos, I only eat 5 chips - serving size is 10 chips. It does satisfy the need for something crunchy and I just can imagine the creative things that talented cooks can do with these items. With my limited cooking knowledge, I can imagine, nachos, taco salads and EVERYTHING Mexican food related, and Greek yogurt dips.
Right now, I am eating - yes, for breakfast, Beanitos with shrimp/pico de gallo "dip" - simple pico de gallo and boiled shrimp mixed together with a little lime, which rested over night. Yum.

Here's another "chip" idea for when you need the snacky/crunchy/salty fix: baked kale chips. I take the stems out of kale leaves, toss them with olive oil, garlic & sea salt, spread them out on a baking sheet and bake around 350 until brown & crunchy. Good amount of fiber and other nutrients....
